Easy going date & muesli muffins..

You must bake these wonderful muffins, batter prepared the night before and left to sit in the fridge. Imagine the smell of the kitchen as you walk from your morning shower...mmmmm.
Otherwise they're a terrific treat to keep in the freezer for those mornings when you're rushing out the door without having had a moment for breakfast. Defrost them on the drive! Easy bloody peasy.


(recipe: Australian Women's Weekly 'home baked' cookbook)
1¼ cups plain flour
1¼ toasted muesli
1 teaspoon ground cinnamon
1 teaspoon bi-carb soda
½ cup firmly packed brown sugar
½ cup unprocessed bran
¾ cup coarsely chopped seedless dates
1½ cups buttermilk
½ cup vegetable oil
1 egg, beaten lightly

1. Combine ingredients in large bowl, stir until just combined. Cover with wrap, refrigerate overnight.
2. Preheat oven to 200°C. Grease 12-hole (1/3 cup) muffin pan or use paper liners.
3. Divide mixture among holes of prepared pan.
4. Bake muffins for about 20 minutes, checking with a steel skewer close to time. Stand muffins in pan for a few minutes before turning onto wire rack.

  3. i must try dates again - i have a barrier against them - too many date loaves in years gone by.
