Coconut crazy this week..


Rumor has it that the Lamington was created in my hometown Brisbane, created for Lord Lamington the Governor of Queensland from April 9 1896 to December 19 1901. The easiest recipe follows.

The recently opened Old Government House tea rooms in Brisbane may tempt some of you locals for a delectable high tea. Ooh la la.

Ingredients
6 eggs
⅔ cup caster sugar
⅓ cup cornflour
½ cup plain flour
⅓ cup sr flour
2 cups coconut

Icing
4 cups icing sugar
½ cup cocoa
2 tbsp butter, melted
⅔ cup milk
Icing: sift icing sugar and cocoa into heatproof bowl; stir in butter and milk. Stir icing over pan of simmering water until it is of a coating consistency.

Method
Grease 9" square slab pan. Beat eggs in medium bowl until thick and creamy. Gradually beat in sugar, dissolving after addition. Fold in triple sifted flours. Spread mixture into pan and bake in a moderate oven for around 30 minutes. Turn cake onto wire rack to cool. Cut cake into 16 squares, dip squares in icing, drain off excess icing, toss squares in coconut. Place lamingtons on a wire rack to set.

    Don't you feel for those Queenslanders of Victorian times who had to get around in those clothes? I hope they had good deodorant!!
